Soy and miso are other common soup broths in Japan.
Most, not all.
The most common broths, like Tonkotsu, aren’t.
Miso is my go-to.
There’s absolutely vegan dishes! I’m not vegan these days but still, a shop near me has this rich, flavorful, wonderful vegan ramen that’s somehow not at all watery, and I’ll get that instead of other kinds regularly.
Vegan options are relatively very recent, so I’m not too surprised that people aren’t aware that some exist.
I’m only saying most broths aren’t, not all.
But you were skeptical?
